Casual Dining at its best ... "where more than the white wine is chilled..."

We are delighted to announce the opening of our new take on casual dining – following a three month build and a spend of over £300K, the Cuillin Hills Hotel is now proud to showcase its new reinterpretation in bar and Brasserie design. The old bar has been completely renovated to give our guests an experience previously unimaginable in Portree. Rooms interconnect to give a feeling of spaciousness, whilst plays on perspective maintain an intimate atmosphere. The grand scheme, that was seen with the new "Drawing Room" is now extended across the reception foyer in a calming palette of chocolate, caramel and tobacco shades, whilst accents of scarlet and gold underscore the classic country house good taste.

A more relaxed and lighter choice is offered on the Cuillin Brasserie Menu where absolutely Scottish ingredients are given a certain French 'je n'est ce quoi', not forgetting our  friendly team are always on hand to make sure that you are well looked after, as you view the panorama of the bay of Portree towards the Cuillin mountains. Our climate is temperamental and sit long enough you will see the mountains appear and disappear with the changing weather ~ a magical sight.

We keep a well stocked bar, full of firm favourites, but the growing collection of single malts is one that we present with pride, especially the "full barrage" of Talisker ®  (including the extremely rare ‘Secret Still edition, one of the few bottles left in existence).

Talking of whisky – we also have our own dedicated Malt Embassy – an elevated area with a vast display of single malts, all pin-lit to show the selection at its best. The display contains the entire range of Talisker malts and the rest of the display allows our guests to sample malts from all areas of Scotland in a tranquil and relaxing setting. The Malt Embassy accentuates its patriotic roots with a bespoken balustrade of steel and wallpaper from ‘Timorous Beasties’ of thistles: our national emblem.

Whatever the weather the Cuillin Brasserie will offer you the warm camaraderie of Skye, solace with a book, or the view from Portree.

Redesigning a Classic: the Story so far...

As befits Portree’s only established 4 Star hotel, careful thought was given to mixing the best of modern design with the refinement of a bygone age. A new bar, in solid mahogany with ornate Victoriana overmantle, looks over into an open plan of tables and leather seating where a new casual style Brasserie menu offers the best that Skye has to offer – great seafood, meats and game. The main Cuillin Brasserie area is housed in a sunroom with a panorama over the bay towards the Cuillin Hills – a vista framed by huge picture windows, offering a view of more than 180°. This idyllic view is one of the best in Scotland and can be enjoyed whilst enjoying a fine Nespresso coffee, great foods from our kitchen, or a drop of the amber nectar.

Besides our well stocked Malt Embassy, we also offer a full bar of premium drinks and our comprehensive wine list is also available to choose from. Peter insisted that the bar also had to make available an enviable cup of coffee – and following on from him spearheading the ‘exclusive’ Cuillin Hills Blend, he chose Nespresso, as employing the natural senses of sight, smell, taste and touch, you can enjoy a rich and intense sensory experience and discover Nespresso coffee, body and soul.

In total, the new Cuillin Brasserie, along with all the previous upgrading, firmly establishes the Cuillin Hills Hotel at the upper levels of hospitality in Skye. The elegant design and collection of inter-connecting spaces highlights good taste with the merging of classical and modern styles, never forgetting focusing the breath-taking view of our eponymous mountain range – in short, our new space offers friendly comfort within a grander design.
